Italian Polenta Bowl

Ingredients

2 qtwater
-
1 1/2 cquick cooking polenta
-
4itallian sausage patties
-
2- 15 ozcans fire roasted tomatoes
-
1/4 cfresh basil, finely chopped
-
1/4 csundried tomatoes, chopped
-
1large red roasted bell pepper, i use the one in the jar
-
1red chili pepper, chopped or jalapeno
-
2 cgarlic, minced(i grate mine into mixture)
-
1/2onion, chopped
-
2 tspdried oregano
-
·salt and pepper to taste
-
·parmesan cheese, for topping
How to Make Italian Polenta Bowl
- Grill, bake or fry sausage until done. In large pot combine tomatoes, basil, sundried tomatoes, bell pepper, red chili pepper, garlic, onion, oregano and salt and pepper, bring to a boil, turn on low heat and let simmer about 30 minutes, stirring occasionlly. When sausage are done bring water to boil, add salt to water, slowly add polenta whisking continuesly until polenta becomes thick, about 3 minutes. Serve in indivisual bowls, begin with polenta, sausage, top with tomato mixture and grate parmesan over top.
