I came up with this recipe doing the stare of what can I cook tonight. My husband loved it and told me it is a keeper. It is very filling but very good. I hope you enjoy it as much as we do.

Ingredients

  • 2 quarts water
  • 1 1/2 cups quick cooking polenta
  • 4 - itallian sausage patties
  • 2- 15 ounces cans fire roasted tomatoes
  • 1/4 cup fresh basil, finely chopped
  • 1/4 cup sundried tomatoes, chopped
  • 1 - large red roasted bell pepper, i use the one in the jar
  • 1 - red chili pepper, chopped or jalapeno
  • 2 cups garlic, minced(i grate mine into mixture)
  • 1/2 - onion, chopped
  • 2 teaspoons dried oregano
  • - salt and pepper to taste
  • - parmesan cheese, for topping

How To Make italian polenta bowl

  • Step 1
    Grill, bake or fry sausage until done. In large pot combine tomatoes, basil, sundried tomatoes, bell pepper, red chili pepper, garlic, onion, oregano and salt and pepper, bring to a boil, turn on low heat and let simmer about 30 minutes, stirring occasionlly. When sausage are done bring water to boil, add salt to water, slowly add polenta whisking continuesly until polenta becomes thick, about 3 minutes. Serve in indivisual bowls, begin with polenta, sausage, top with tomato mixture and grate parmesan over top.
