Italian Meat Sauce

1/2 c
olive oil
1.5 c
onion, finely chopped
1 c
carrots, grated
1/2 c
celery, finely chopped
2.5 c
mushrooms, finely chopped
2 tsp
finely chopped parsley
2 lb
lean ground beef/hamburger
2 Tbsp
2 Tbsp
tomato puree
1 c
red wine
3.5 c
beef broth
salt to taste
pepper to taste
oregano to taste
garlic to taste


1Combine butter and oil in large frypan and heat.
2Add onions and saute' for one minute.
3Add carrots, celery, mushrooms and parsley; cook, stirring frequently for 5 minutes.
4Crumble in ground beef and cook, stirring frequently until lightly browned.
5Sprinkle flour over the ground beef and stir until well blended.
6Stir in puree.
7Add wine gradually, stirring constantly.
8Add the broth and season with spices as desired.
9Simmer, stirring occasionally, for about 1 hour or until thickened.
10Serve with pasta.
11Each serving is about 1 cup of sauce.
