Ingredients
- 2 cups cooked white rice
- 4 teaspoons extra virgin olive oil
- 5 cloves finely chopped garlic
- 1 pound ground beef
- 4 cups pasta sauce - i prefer homemade
- 1 cup parmesan cheese, grated
- 1 cup mozzarella cheese, grated
- 3 - beaten eggs
- 1 cup italian bread crumbs
- 1 cup panko bread crumbs
- - salt and pepper to taste
How To Make italian boudin balls

Step 1Cook rice and set aside. Saute garlic in olive oil, add ground meat, cook until browned. Drain off excess grease.

Step 2Mix rice, meat, salt & pepper and 1 cup of pasta sauce in large bowl. Add cheeses and mix well. Gently form mixture into 2" balls. Place on cookie sheet and refrigerate until cold. About 30 minutes.

Step 3Preheat oven to 350*F. Mix both bread crumbs together. Dip balls in beaten egg then bread crumbs, making sure they are coated well. Place on baking sheet and bake until crispy. About 30 minutes. Serve with the remaining heated pasta sauce.
