Italian Boudin Balls

These are a favorite of my whole family... So worth the effort.

2 c
cooked white rice
4 tsp
extra virgin olive oil
5 clove
finely chopped garlic
1 lb
ground beef
4 c
pasta sauce - i prefer homemade
1 c
parmesan cheese, grated
1 c
mozzarella cheese, grated
beaten eggs
1 c
italian bread crumbs
1 c
panko bread crumbs
salt and pepper to taste


1Cook rice and set aside. Saute garlic in olive oil, add ground meat, cook until browned. Drain off excess grease.
2Mix rice, meat, salt & pepper and 1 cup of pasta sauce in large bowl. Add cheeses and mix well.
Gently form mixture into 2" balls. Place on cookie sheet and refrigerate until cold. About 30 minutes.
3Preheat oven to 350*F. Mix both bread crumbs together. Dip balls in beaten egg then bread crumbs, making sure they are coated well. Place on baking sheet and bake until crispy. About 30 minutes. Serve with the remaining heated pasta sauce.
