fettuccine - plain and simple

I was in the mood for something simple last night, and know my kids love Fettuccine..so, I whipped up the sauce..it's so easy..boiled the noodles and you have a delicious simple meal... My daughter would eat this every day of the week if I made it... Serve with a salad and garlic bread.. Delicious! My pictures.

Ingredients

  • 1 box fettuccine pasta, prepared el dente
  • 2 cloves garlic, minced
  • 3 cups heavy cream
  • 1 cup shredded parmesan cheese
  • 2 teaspoons paprika, i use smoked
  • 1 1/2 teaspoons salt
  • 1 teaspoon fresh ground pepper, or whatever pepper you use
  • - pinch of nutmeg
  • - additional parmesan cheese for garnish
  • 3 - 4 - scallion, sliced , including green part ( optional) for garnish

How To Make fettuccine - plain and simple

  • Step 1
    Prepare pasta according to package directions
  • Step 2
    While pasta is cooking; in a medium saucepan, on medium heat; saute the garlic in a tablespoon of oil, just long enough to extract flavor, do not burn.
  • Step 3
    Add the 3 cups of cream, bring to a simmer, add the paprika, nutmeg, salt, pepper and Parmesan cheese, stirring constantly as so not to scorch. Continue simmering until sauce starts to thicken ( about 10 - 15 minutes ). It may seem too thin, but will thicken as it starts to cool down. If you want it thicker just add some more Parmesan.
  • Step 4
    When pasta is finished cooking, drain well. I add a small amount of olive oil and toss. Plate your pasta; ladle sauce over the pasta, sprinkle with more Parmesan cheese and scallions.. **I don't rinse my pasta, the sauce will adhere better if not rinsed.
  • Step 5
    You can add chicken, mushrooms, peppers, whatever you like..we were just in the mood for simple..
