Fettuccine - Plain And Simple

I was in the mood for something simple last night, and know my kids love Fettuccine..so, I whipped up the sauce..it's so easy..boiled the noodles and you have a delicious simple meal...

My daughter would eat this every day of the week if I made it...

Serve with a salad and garlic bread.. Delicious!

makes 3 cups of sauce, should serve 4

1 box
fettuccine pasta, prepared el dente
2 clove
garlic, minced
3 c
heavy cream
1 c
shredded parmesan cheese
2 tsp
paprika, i use smoked
1 1/2 tsp
1 tsp
fresh ground pepper, or whatever pepper you use
pinch of nutmeg
additional parmesan cheese for garnish
3 - 4
scallion, sliced , including green part ( optional) for garnish


1Prepare pasta according to package directions
2While pasta is cooking; in a medium saucepan, on medium heat; saute the garlic in a tablespoon of oil, just long enough to extract flavor, do not burn.
3Add the 3 cups of cream, bring to a simmer, add the paprika, nutmeg, salt, pepper and Parmesan cheese, stirring constantly as so not to scorch.

Continue simmering until sauce starts to thicken ( about 10 - 15 minutes ). It may seem too thin, but will thicken as it starts to cool down. If you want it thicker just add some more Parmesan.
4When pasta is finished cooking, drain well. I add a small amount of olive oil and toss.

Plate your pasta; ladle sauce over the pasta, sprinkle with more Parmesan cheese and scallions..

**I don't rinse my pasta, the sauce will adhere better if not rinsed.
5You can add chicken, mushrooms, peppers, whatever you like..we were just in the mood for simple..
