Ingredients

oil
2
eggplants
1/2 c
zucchini or 2 zucchini, diced/chopped
1
green bell pepper, diced
italian seasoning
salt and pepper to taste
jar/can marinara sauce

How to Make Eggplant Parmesan

Step-by-Step

  • 1Drizzle oil in pan. Cook veggies till tender, crisp, not mushy.
  • 2Sprinkle with Italian seasoning. Add marinara. Cook till all is heated through.
