Ingredients
- - oil
- 2 - eggplants
- 1/2 cup zucchini or 2 zucchini, diced/chopped
- 1 - green bell pepper, diced
- - italian seasoning
- - salt and pepper to taste
- - jar/can marinara sauce
How To Make eggplant parmesan

Step 1Drizzle oil in pan. Cook veggies till tender, crisp, not mushy.

Step 2Sprinkle with Italian seasoning. Add marinara. Cook till all is heated through.
