This was my very first attempt at cooking with eggplant....

- 1/2 c
- zucchini or 2 zucchini, diced/chopped
- green bell pepper, diced
- italian seasoning
- salt and pepper to taste
- jar/can marinara sauce
1Drizzle oil in pan. Cook veggies till tender, crisp, not mushy.
2Sprinkle with Italian seasoning. Add marinara. Cook till all is heated through.
