My Dad made this when I was a child. He was so creative in the kitchen I would stand around and watch. This goes back to my childhood.

Ingredients
- 1 large eggplant
- 1 jar prego spaghetti sauce or your choice of sauce
- 1 bag mozarella cheese
- 1 - egg well beaten
- 1/2 package fresh mushrooms sliced
How To Make eggplant parmesan

Step 1Cut eggplant to your desired thickness dredge into beaten egg and brown in skillet with hot oil til brown on both sides. Pour spaghetti into bottom of casserole dish to cover the bottom.

Step 2Layer the eggplant,mushrooms,cheese,and spaghetti sauce as you would making lasagna. Bake @375 for about 40 minutes. Layer cheese on top last 5 minutes of baking.
