Ingredients

  • 1 large
    eggplant
  • 1 1/2 lb
    ground beef
  • 1 large
    onion
  • 3/4 c
    bread crumbs
  • 3/4 c
    tomato sauce
  • 1 tsp
    parsley
  • ·
    oregano, dried
  • ·
    basil
  • ·
    salt and pepper
  • 1 can(s)
    diced tomatoes
  • ·
    parmesan cheese

How to Make Eggplant Casserole

Step-by-Step

  1. Preheat oven to 350 degrees
    Slice eggplant thin
    Brown ground beef and onion, then in pan
    Add Bread Crumbs (be a little generous)
    Add Tomato sauce
    Add parslay, oregano, basil and salt & Pepper to taste
    Add Diced Tomatoes
    Add Parm. Cheese
  2. Sauce on bottom of 13x9 pan
    layer eggplant slices
    layer beef mix
    Eggplant slices
    layer beef mix
    add sauce and sprinkle with parm
  3. Cover with foil and bake at 350 for 40 - 45 min, or until eggplant cooked and soft
    Serve with veggie and salad
