Ingredients

1 large
eggplant
1 1/2 lb
ground beef
1 large
onion
3/4 c
bread crumbs
3/4 c
tomato sauce
1 tsp
parsley
oregano, dried
basil
salt and pepper
1 can(s)
diced tomatoes
parmesan cheese

How to Make Eggplant Casserole

Step-by-Step

  • 1Preheat oven to 350 degrees
    Slice eggplant thin
    Brown ground beef and onion, then in pan
    Add Bread Crumbs (be a little generous)
    Add Tomato sauce
    Add parslay, oregano, basil and salt & Pepper to taste
    Add Diced Tomatoes
    Add Parm. Cheese
  • 2Sauce on bottom of 13x9 pan
    layer eggplant slices
    layer beef mix
    Eggplant slices
    layer beef mix
    add sauce and sprinkle with parm
  • 3Cover with foil and bake at 350 for 40 - 45 min, or until eggplant cooked and soft
    Serve with veggie and salad
