Ingredients

  • 1 large eggplant
  • 1 1/2 pounds ground beef
  • 1 large onion
  • 3/4 cup bread crumbs
  • 3/4 cup tomato sauce
  • 1 teaspoon parsley
  • - oregano, dried
  • - basil
  • - salt and pepper
  • 1 can diced tomatoes
  • - parmesan cheese

How To Make eggplant casserole

  • Step 1
    Preheat oven to 350 degrees Slice eggplant thin Brown ground beef and onion, then in pan Add Bread Crumbs (be a little generous) Add Tomato sauce Add parslay, oregano, basil and salt & Pepper to taste Add Diced Tomatoes Add Parm. Cheese
  • Step 2
    Sauce on bottom of 13x9 pan layer eggplant slices layer beef mix Eggplant slices layer beef mix add sauce and sprinkle with parm
  • Step 3
    Cover with foil and bake at 350 for 40 - 45 min, or until eggplant cooked and soft Serve with veggie and salad
