My children always asked for these as a special dinner item on birthday. Now they think that if I have fixed it, someone special is coming over and want to know why they were not invited!

Ingredients

  • 2 boxes manicotti shells (sometimes i substitute large shells
  • 1 tablespoon olive oil, light
  • 12-16 ounces cottage cheese, small curd
  • 6 tablespoons chopped fresh parsley
  • 1/2 cup parmesean cheese, fresh
  • 1 pound extra lean ground beef
  • 1 pinch salt and pepper
  • 1 can spaghetti sauce, meatless
  • 1 - egg, slightly beaten

How To Make easy manicotti

  • Step 1
    Preheat oven to 350 degrees. pour 1/3 - 1/2 can sauce in bottom of 11x13 cake pan.
  • Step 2
    Put oil in pot of boiling water. Add shells. Cook as directed.
  • Step 3
    While shells are cooking, mix all ingredients except meat and sauce in large bowl with a large spoon or fork.
  • Step 4
    Gradually add meat and mix together by hand.
  • Step 5
    Drain shells and allow to cool 5 min. Gently stuff shells with meat mixture and place in pan. Pour remaining sauce over top and sprinkle fresh parmesean on top. put in oven and bake.
  • Step 6
    Remove from oven and allow to sit 5-10 minutes. Can be served straight from pan.
