My children always asked for these as a special dinner item on birthday. Now they think that if I have fixed it, someone special is coming over and want to know why they were not invited!

2 box
manicotti shells (sometimes i substitute large shells
1 Tbsp
olive oil, light
12-16 oz
cottage cheese, small curd
6 Tbsp
chopped fresh parsley
1/2 c
parmesean cheese, fresh
1 lb
extra lean ground beef
1 pinch
salt and pepper
1 can(s)
spaghetti sauce, meatless
egg, slightly beaten

How to Make Easy Manicotti


  • 1Preheat oven to 350 degrees. pour 1/3 - 1/2 can sauce in bottom of 11x13 cake pan.
  • 2Put oil in pot of boiling water. Add shells. Cook as directed.
  • 3While shells are cooking, mix all ingredients except meat and sauce in large bowl with a large spoon or fork.
  • 4Gradually add meat and mix together by hand.
  • 5Drain shells and allow to cool 5 min. Gently stuff shells with meat mixture and place in pan. Pour remaining sauce over top and sprinkle fresh parmesean on top. put in oven and bake.
  • 6Remove from oven and allow to sit 5-10 minutes. Can be served straight from pan.
