Easy Manicotti

My children always asked for these as a special dinner item on birthday. Now they think that if I have fixed it, someone special is coming over and want to know why they were not invited!
Ingredients

2 boxmanicotti shells (sometimes i substitute large shells

1 Tbspolive oil, light
-
12-16 ozcottage cheese, small curd

6 Tbspchopped fresh parsley
-
1/2 cparmesean cheese, fresh
-
1 lbextra lean ground beef
-
1 pinchsalt and pepper
-
1 can(s)spaghetti sauce, meatless
-
1egg, slightly beaten
How to Make Easy Manicotti
- Preheat oven to 350 degrees. pour 1/3 - 1/2 can sauce in bottom of 11x13 cake pan.
- Put oil in pot of boiling water. Add shells. Cook as directed.
- While shells are cooking, mix all ingredients except meat and sauce in large bowl with a large spoon or fork.
- Gradually add meat and mix together by hand.
- Drain shells and allow to cool 5 min. Gently stuff shells with meat mixture and place in pan. Pour remaining sauce over top and sprinkle fresh parmesean on top. put in oven and bake.
- Remove from oven and allow to sit 5-10 minutes. Can be served straight from pan.
