crowd pleasing caprese salad

Don't you love the simple yumminess of a light caprese as an appetizer at your favorite Italian restaurant? I do, but sure dont like the price or portion. I came up with this to solve both issues and to share with others.

Ingredients

  • 8 medium roma tomatoes (cut into quarters then sliced 1 in. thick)
  • 1 pound whole milk mozzarella (cut into 1/2 in cubes)
  • 1 tablespoon dried basil (or 3tblsp fresh chopped fine)
  • 2 ounces olive oil, extra virgin
  • 1 ounce balsamic vinegar
  • 3 dashes salt
  • 1 1/2 dashes pepper

How To Make crowd pleasing caprese salad

  • Step 1
    Add all ingredients to a larger plastic storage container.
  • Step 2
    Stir well. Place lid atop.
  • Step 3
    Periodically shake container to incorporate ingredients further.
  • Step 4
    Transfer into serving dish of choice and serve with slotted spoon.
  • Step 5
    Dish may be refrigerated up 2 days prior to serving.
  • Step 6
    An alernate appetizer/hor d'ourve presentation of this is to use toothpicks to skewer and arrange on a platter. (Tomato-Mozzarella-Mozzarella-Tomato)
