crowd pleasing caprese salad

Don't you love the simple yumminess of a light caprese as an appetizer at your favorite Italian restaurant? I do, but sure dont like the price or portion. I came up with this to solve both issues and to share with others.

Ingredients
- 8 medium roma tomatoes (cut into quarters then sliced 1 in. thick)
- 1 pound whole milk mozzarella (cut into 1/2 in cubes)
- 1 tablespoon dried basil (or 3tblsp fresh chopped fine)
- 2 ounces olive oil, extra virgin
- 1 ounce balsamic vinegar
- 3 dashes salt
- 1 1/2 dashes pepper
How To Make crowd pleasing caprese salad

Step 1Add all ingredients to a larger plastic storage container.

Step 2Stir well. Place lid atop.

Step 3Periodically shake container to incorporate ingredients further.

Step 4Transfer into serving dish of choice and serve with slotted spoon.

Step 5Dish may be refrigerated up 2 days prior to serving.

Step 6An alernate appetizer/hor d'ourve presentation of this is to use toothpicks to skewer and arrange on a platter. (Tomato-Mozzarella-Mozzarella-Tomato)
