I developed this recipe while trying to creatively use up left-overs. The result was better than the original meals! This can be served as a main course (serves 4) or cut into strips as a great appetizer or snack (serves 8).

Ingredients
- 1 - loaf of italian bread
- 4 tablespoons olive oil, extra virgin
- 2 teaspoons garlic powder
- 1/2 cup romano cheese, grated
- 1 teaspoon black pepper
- TOPPING
- 2 cups marinara sauce
- 2 cups cooked chicken, shredded
- 1/2 cup thinly sliced onion
- 1/4 cup sliced black olives
- 1 jar roasted red pepper slices
- 1/4 cup dry red wine (optional)
- 3 cups shredded provolone cheese
How To Make chicken cacciatori garlic bread pizza

Step 1Slice Italian bread horizontally. Mix oil and garlic powder together and brush on cut sides of bread (both top and bottom). Sprinkle romano cheese and pepper evenly over both halves. Bake in a 350 degree oven for 10-12 minutes, until cheese starts to get slightly golden brown. Set aside.

Step 2In a saucepan, combine marinara, onion, olives, and wine if desired. Cook on medium heat for 10 minutes until onions are soft. Add chicken and simmer on low 10-15 minutes.

Step 3Drain the peppers and place in an even layer over the top of the Garlic Bread halves. Divide chicken mixture and spread evenly over both halves of bread. Top each half with 1 1/2 cups of shredded cheese.

Step 4Return to the oven and let cheese melt. If you like your cheese browned (I do!)set it under the broiler, keeping a close eye on it until it is cooked to desires brownness.
