caprese tortellini salad
I needed to fix a lunch for my husband and was determined not to make the same old sandwich thing. I had these ingredients on hand. Turned out great and he loved it! This is one of those recipes you can add or take away and even substitute ingredients, enjoy!

Ingredients
- 10 ounces pkg. spinach, cheese, tortellini
- 1/2 cup grape tomatoes cut in 2
- 1/2 package burrata or fresh mozzarella cheese (chopped)
- 1 medium handful of fresh basil chopped
- 1/4 cup sliced green olives
- 1 tablespoon parmesan cheese
- 2 tablespoons balsamic vinegar
- 3 tablespoons olive oil (light works best)
- 3 dashes hot sauce
- 1 teaspoon fresh squeezed lemon
- 2 tablespoons pine nuts
How To Make caprese tortellini salad

Step 1Boil the pasta according to package directions and cool to room temp.

Step 2If using the Burrata, it will be very creamy. Burrata is Mozzarella with cream inside. So I sliced it and let it drain a bit before adding it to the bowl. chop the basil and cut the tomatoes in half. Chop the olives. Add Pasta to dish and gently mix together.

Step 3Dressing: Mix olive oil, vinegar, hot sauce, lemon, salt and pepper into a jar and shake a few times until well incorporated. Add dressing to salad and stir until blended, top with Parm. and Pine nuts
