caprese tortellini salad

I needed to fix a lunch for my husband and was determined not to make the same old sandwich thing. I had these ingredients on hand. Turned out great and he loved it! This is one of those recipes you can add or take away and even substitute ingredients, enjoy!

Ingredients

  • 10 ounces pkg. spinach, cheese, tortellini
  • 1/2 cup grape tomatoes cut in 2
  • 1/2 package burrata or fresh mozzarella cheese (chopped)
  • 1 medium handful of fresh basil chopped
  • 1/4 cup sliced green olives
  • 1 tablespoon parmesan cheese
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons olive oil (light works best)
  • 3 dashes hot sauce
  • 1 teaspoon fresh squeezed lemon
  • 2 tablespoons pine nuts

How To Make caprese tortellini salad

  • Step 1
    Boil the pasta according to package directions and cool to room temp.
  • Step 2
    If using the Burrata, it will be very creamy. Burrata is Mozzarella with cream inside. So I sliced it and let it drain a bit before adding it to the bowl. chop the basil and cut the tomatoes in half. Chop the olives. Add Pasta to dish and gently mix together.
  • Step 3
    Dressing: Mix olive oil, vinegar, hot sauce, lemon, salt and pepper into a jar and shake a few times until well incorporated. Add dressing to salad and stir until blended, top with Parm. and Pine nuts
