Ingredients

  • 1/2 c
    whole wheat flour
  • ·
    sea salt and freshly cracked black pepper to taste
  • 4 - 6
    veal medallions
  • 1/4 c
    butter
  • 4
    shallots, minced
  • 1/3 c
    fresh mushrooms, chopped
  • 2/3 c
    cooked ham, chopped
  • 1/4 c
    whole wheat flour
  • 1 c
    1% milk
  • 1 c
    low fat swiss cheese, shredded

How to Make Bunyan's Diabetic Veal Scaloppini with Cream Sauce

Step-by-Step

  1. Combine the first one half cup flour and salt and pepper in a small bag
  2. Place veal medallions one at a time in the bag and shake to coat
  3. Melt butter in a skillet and brown veal on both sides
  4. Remove and place in baking dish
  5. In the same skillet that you browned the veal in, saute shallots until tender
  6. Add mushrooms and ham
  7. Combine remaining one quarter cup of flour and milk and mix well
  8. Pour over shallots, mushrooms and ham and cook over medium heat until mixture starts to thicken
  9. Pour over veal and sprinkle with cheese
  10. Bake in a preheated oven at 375 until cheese melts
