Ingredients
- 1/2 cup whole wheat flour
- - sea salt and freshly cracked black pepper to taste
- 4 - 6 - veal medallions
- 1/4 cup butter
- 4 - shallots, minced
- 1/3 cup fresh mushrooms, chopped
- 2/3 cup cooked ham, chopped
- 1/4 cup whole wheat flour
- 1 cup 1% milk
- 1 cup low fat swiss cheese, shredded
How To Make bunyan's diabetic veal scaloppini with cream sauce

Step 1Combine the first one half cup flour and salt and pepper in a small bag

Step 2Place veal medallions one at a time in the bag and shake to coat

Step 3Melt butter in a skillet and brown veal on both sides

Step 4Remove and place in baking dish

Step 5In the same skillet that you browned the veal in, saute shallots until tender

Step 6Add mushrooms and ham

Step 7Combine remaining one quarter cup of flour and milk and mix well

Step 8Pour over shallots, mushrooms and ham and cook over medium heat until mixture starts to thicken

Step 9Pour over veal and sprinkle with cheese

Step 10Bake in a preheated oven at 375 until cheese melts
