Ingredients

  • 1/2 cup whole wheat flour
  • - sea salt and freshly cracked black pepper to taste
  • 4 - 6 - veal medallions
  • 1/4 cup butter
  • 4 - shallots, minced
  • 1/3 cup fresh mushrooms, chopped
  • 2/3 cup cooked ham, chopped
  • 1/4 cup whole wheat flour
  • 1 cup 1% milk
  • 1 cup low fat swiss cheese, shredded

How To Make bunyan's diabetic veal scaloppini with cream sauce

  • Step 1
    Combine the first one half cup flour and salt and pepper in a small bag
  • Step 2
    Place veal medallions one at a time in the bag and shake to coat
  • Step 3
    Melt butter in a skillet and brown veal on both sides
  • Step 4
    Remove and place in baking dish
  • Step 5
    In the same skillet that you browned the veal in, saute shallots until tender
  • Step 6
    Add mushrooms and ham
  • Step 7
    Combine remaining one quarter cup of flour and milk and mix well
  • Step 8
    Pour over shallots, mushrooms and ham and cook over medium heat until mixture starts to thicken
  • Step 9
    Pour over veal and sprinkle with cheese
  • Step 10
    Bake in a preheated oven at 375 until cheese melts
