Ingredients For amy's spinach lasagna

8 ozlasagna noodles, cooked

2 Tbspolive oil
-
2 cchopped onion
-
2 csliced mushrooms
-
1/2-1 cchopped green bell pepper
-
2 cloveminced garlic
-
2 cchopped tomatoes
-
1 bunchfresh spinach; washed, drained, & chopped

1 cchopped celery
-
1 jarspaghetti sauce (32 oz)
-
2 tspdried sweet basil
-
1 tspdried sage
-
1/2 tspdried oregano
-
1/4 tspdried thyme
-
1/4 tspdried marjoram
-
2 tspitalian seasoning
-
3 cshredded mozzarella
-
pinchsalt to taste
How To Make amy's spinach lasagna

1Prepare lasagna noodles according to package directions. Preheat oven to 350 degrees.

2Heat olive oil in a large saucepan over medium heat; add onions, mushrooms, pepper, & garlic. Saute 3-4 minutes, stirring occasionally. Add rest of ingredients, except Italian seasoning & cheese. Simmer over low heat for 10 minutes, stirring occasionally.

3Lightly oil a 9 x 13 inch pan. Lay cooked noodles on bottom of pan to cover it, then add layers of half the the sauce mix & 1 1/2 cups of cheese. Sprinkle w/ Italian seasoning. Repeat layers . Bake uncovered for 25 minutes or until bubbly. (you can cover w/ aluminum foil if cheese starts to burn)
