mushroom-crust quiche
The first time I made this Quiche was for a "Girls" weekend at the beach. I served it with a nice salad for a great light supper. Nice with a glass of wine and a crusty bread.

Ingredients
- 5 tablespoons butter
- 8 ounces mushrooms, chopped
- 1/2 cup saltine crackers, crushed
- 1/4 cup green onions, chppped
- 2 cups swiss cheese, shredded
- 1 cup cottage cheese, small curd
- 3 large eggs
- 1/4 teaspoon cayenne pepper
- 2 1/4 teaspoons paprika, sweet mild
How To Make mushroom-crust quiche

Step 1Preheat oven to 350-degrees. Grease a 9-inch pie plate.

Step 2Saute` mushrooms in 3 tablespoons butter; stir in crackers. Press mixture into the pie pan; set aside.

Step 3Cook onion in remaining 2 tablespoons butter. Spread onions over crust and sprinkle with cheese.

Step 4In a blender or food processor, mix cottage cheese, eggs, and cayenne pepper until smooth. Pour mixture into the crust, and sprinkle with paprika.

Step 5Bake for 30 minutes or until a knife inserted in the center comes out clean. Let stand 15 minutes before serving.
