I visit my dad in NC, and he lives right near Wrightsville Beach. I don't recall if he gave me this recipe, or we found it in the paper, but we had great results!

Ingredients

  • 2 tablespoons fresh lemon or orange juice
  • 1/4 cup olive oil
  • 2 tablespoons sesame oil (optional)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon ground ginger
  • 1 clove garlic, chopped
  • 2 teaspoons soy sauce
  • 2 pounds fresh orange roughy, grouper, or swordfish

How To Make wrightsville beach grilled fish

  • Step 1
    Combine all ingredients, except fish, in small bowl. Mix well. Pour over fresh fish and allow to marinate 4-24 hours in refrigerator. When ready to grill, remove fish from marinade. Grill until fish flakes with fork, about 10 minutes cooking time for each inch of thickness.   Dad made for us 4-7-15. He used the sesame oil, and we used grouper as we couldn't get swordfish. He says not to use this with Tuna because of the lemon and long marinating time. Recipe Origin Ken Robinson, Easter 2015
  • Step 2
    7-20-22 Dad grilled halibut on a cedar plank, and we halved the Marinade. It was super good!
