Ingredients
- 4 large salmon steaks
- 3 tablespoons butter, melted
- 3 tablespoons peanut or olive oil
- 2 tablespoons lemon juice
- 2 tablespoons garlic, minced
- 1 teaspoon fresh tarragon, finely chopped
- 1/4 teaspoon lemon peel, grated
- 1/8 teaspoon peanut or olive oil
- - salt and pepper to taste
- - lemon wedges
How To Make west coast garlic salmon

Step 1Combine butter, oil, lemon juice, tarragon, lemon peel and pepper flakes to make a marinade.

Step 2Place fish steaks on broiler and brush with half the marinade.

Step 3Broil under pre-heated broiler, 2 inches from heat, for 4 minutes.

Step 4Turn the steaks, brush with remaining marinade, and broil until fish flakes to fork (about 4 more minutes).

Step 5Salt and pepper to taste and serve immediately with lemon wedges.

Step 6Variations: Use cobia, king mackerel, grouper or other large fish steaks instead of salmon.
