  • 4 large
    salmon steaks
  • 3 Tbsp
    butter, melted
  • 3 Tbsp
    peanut or olive oil
  • 2 Tbsp
    lemon juice
  • 2 Tbsp
    garlic, minced
  • 1 tsp
    fresh tarragon, finely chopped
  • 1/4 tsp
    lemon peel, grated
  • 1/8 tsp
    peanut or olive oil
  • ·
    salt and pepper to taste
  • ·
    lemon wedges

How to Make West Coast Garlic Salmon


  1. Combine butter, oil, lemon juice, tarragon, lemon peel and pepper flakes to make a marinade.
  2. Place fish steaks on broiler and brush with half the marinade.
  3. Broil under pre-heated broiler, 2 inches from heat, for 4 minutes.
  4. Turn the steaks, brush with remaining marinade, and broil until fish flakes to fork (about 4 more minutes).
  5. Salt and pepper to taste and serve immediately with lemon wedges.
  6. Variations: Use cobia, king mackerel, grouper or other large fish steaks instead of salmon.
