Ingredients

  • 4 large salmon steaks
  • 3 tablespoons butter, melted
  • 3 tablespoons peanut or olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons garlic, minced
  • 1 teaspoon fresh tarragon, finely chopped
  • 1/4 teaspoon lemon peel, grated
  • 1/8 teaspoon peanut or olive oil
  • - salt and pepper to taste
  • - lemon wedges

How To Make west coast garlic salmon

  • Step 1
    Combine butter, oil, lemon juice, tarragon, lemon peel and pepper flakes to make a marinade.
  • Step 2
    Place fish steaks on broiler and brush with half the marinade.
  • Step 3
    Broil under pre-heated broiler, 2 inches from heat, for 4 minutes.
  • Step 4
    Turn the steaks, brush with remaining marinade, and broil until fish flakes to fork (about 4 more minutes).
  • Step 5
    Salt and pepper to taste and serve immediately with lemon wedges.
  • Step 6
    Variations: Use cobia, king mackerel, grouper or other large fish steaks instead of salmon.
