4 large
salmon steaks
3 Tbsp
butter, melted
3 Tbsp
peanut or olive oil
2 Tbsp
lemon juice
2 Tbsp
garlic, minced
1 tsp
fresh tarragon, finely chopped
1/4 tsp
lemon peel, grated
1/8 tsp
peanut or olive oil
salt and pepper to taste
lemon wedges

How to Make West Coast Garlic Salmon


  • 1Combine butter, oil, lemon juice, tarragon, lemon peel and pepper flakes to make a marinade.
  • 2Place fish steaks on broiler and brush with half the marinade.
  • 3Broil under pre-heated broiler, 2 inches from heat, for 4 minutes.
  • 4Turn the steaks, brush with remaining marinade, and broil until fish flakes to fork (about 4 more minutes).
  • 5Salt and pepper to taste and serve immediately with lemon wedges.
  • 6Variations: Use cobia, king mackerel, grouper or other large fish steaks instead of salmon.
