Ingredients
- FOR THE MARINADE
- 1 tablespoon sesame oil
- 1 teaspoon each soy sauce and fish sauce
- 1 tablespoon lemongrass finely chopped
- 1 clove garlic minced
- 1 birds eye chili finely chopped
- FOR THE FISH
- 2 bass filets skinless
- 3 tablespoons vegetable oil
- TO SERVE
- fresh greens and lime wedges
How To Make vietnamese style pan seared bass filet

Step 1Mix the marinade ingredients together and place in a large baggie. Add the bass filets and let marinade at least 1 hour or overnight best.

Step 2Add oil to a large pan. Remove the fish from the marinade reserving the marinade. Sear the filets on each side for about 3 minutes. Remove to a dish and keep warm. Add the marinade to the pan and bring to a boil. Remove from heat.

Step 3Add some greens of choice to a plate. Top with bass filet and drizzle the pan dripping over the fish. Squeeze a little lime and serve
