Ingredients
- 4 - 6-8 oz red snapper fillets
- - cooking spray
- 1/2 teaspoon ground cumin
- 1/4 teaspoon sea salt
- 1/4 teaspoon red pepper flakes
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped, pitted green olives
- 1/4 cup bottled salsa
- 1 can (16-ounce) pinto beans, drained
- 1 can (14.5-ounce) diced tomatoes, drained
- 4 - lime wedges
How To Make veracruz style red snapper

Step 1Preheat grill or broiler. Coat both sides of fish with cooking spray, and sprinkle with cumin, salt, and pepper flakes.

Step 2Place fish on grill rack, or broiler pan coated with cooking spray. Cook fillets 5 minutes on each side or until flesh flakes with a fork.

Step 3Combine cilantro and remaining ingredients, except lime wedges. Serve fish with salsa and lime wedges.
