This recipe calls for red snapper but any thin white-fish fillets will work just as well. Use whatever looks freshest and best at the store.

Ingredients

  • 4 - 6-8 oz red snapper fillets
  • - cooking spray
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped, pitted green olives
  • 1/4 cup bottled salsa
  • 1 can (16-ounce) pinto beans, drained
  • 1 can (14.5-ounce) diced tomatoes, drained
  • 4 - lime wedges

How To Make veracruz style red snapper

  • Step 1
    Preheat grill or broiler. Coat both sides of fish with cooking spray, and sprinkle with cumin, salt, and pepper flakes.
  • Step 2
    Place fish on grill rack, or broiler pan coated with cooking spray. Cook fillets 5 minutes on each side or until flesh flakes with a fork.
  • Step 3
    Combine cilantro and remaining ingredients, except lime wedges. Serve fish with salsa and lime wedges.
