I found this recipe on Pinterest. This is the first time I have made this recipe, and hubby and I both thought it was delicious and deem it a "keeper".
The original used diced tomatoes with oregano and basil, but all I had was olive oil and garlic. The original also used capers. I didn't have capers, but probably wouldn't have used them, if I had because I don't care for them.

Ingredients For tuscan baked fish
diced tomatoes with olive oil and garlic
each chopped oregano and basil (or add your own herbs)
boneless, skinless fish filets (cod, tilapia, or other flaky white fish, about 3-4 oz each)
salt and pepper, to taste
How To Make tuscan baked fish
Preheat oven to 375 degrees F.
In a large, oven-proof pan, heat olive oil on medium high until shimmery.
Add diced onion and cook until soft and slightly browned, about 8 minutes.
Add can of tomatoes, herbs, and salt & pepper, to taste. Cook and stir over medium heat until slightly reduced, about 5 minutes.
Add the fish to the pan and put into oven for about 15 minutes, until fish is flaky and white. Check for doneness at about 8 minutes, and then again after 12 minutes. The cooking time will depend on the size of your filets and your oven.
