tuscan baked fish
I found this recipe on Pinterest. This is the first time I have made this recipe, and hubby and I both thought it was delicious and deem it a "keeper". The original used diced tomatoes with oregano and basil, but all I had was olive oil and garlic. The original also used capers. I didn't have capers, but probably wouldn't have used them, if I had because I don't care for them.

Ingredients
- 1 tablespoon olive oil
- 1 large onion, diced
- 1 can diced tomatoes with olive oil and garlic
- 2 teaspoons each chopped oregano and basil (or add your own herbs)
- 4 boneless, skinless fish filets (cod, tilapia, or other flaky white fish, about 3-4 oz each)
- salt and pepper, to taste
How To Make tuscan baked fish

Step 1Preheat oven to 375 degrees F.

Step 2In a large, oven-proof pan, heat olive oil on medium high until shimmery.

Step 3Add diced onion and cook until soft and slightly browned, about 8 minutes.

Step 4Add can of tomatoes, herbs, and salt & pepper, to taste. Cook and stir over medium heat until slightly reduced, about 5 minutes.

Step 5Add the fish to the pan and put into oven for about 15 minutes, until fish is flaky and white. Check for doneness at about 8 minutes, and then again after 12 minutes. The cooking time will depend on the size of your filets and your oven.
