tunacake tacos

I make a great tuna noodle wiggle that my kids love, but I was thinking what else, besides sammies can I make with canned tuna and it hit me...use tuna like crab and make a tunacake or ball. So good and much more pocketbook friendly than crab. So good you have to try it and let me know. Thanks Monica

Ingredients

  • 1 can tuna
  • 1 - red pepper finely diced
  • 1 - onion finely diced
  • 1 - celery stalk finely diced
  • 1 clove garlic finely diced
  • 10 - ritz crackers ground
  • 1 - handful oyster crackers ground
  • 1 - egg
  • 2 tablespoons mayo
  • 1 - handfull of parsley chopped
  • 1/2 tablespoon old bay seasoning (or to taste)
  • - dash or two of worcestershire sauce
  • - dash of tabasco
  • - salt and pepper to taste
  • 1 package soft flour tortilla
  • 1 package shredded mexican cheese
  • 1 teaspoon dijon mustard
  • 1 - lemon
  • - splash sriracha
  • - cilantro to chopped as garnish
  • - lime at garnish
  • - shredded carrots
  • - shredded lettuce or cabbage whichever you prefer

How To Make tunacake tacos

  • Step 1
    Heat some olive oil in a large saute pan, add the onions, celery, red pepper and cook until soft, add the garlic. Remove from heat and let cook
  • Step 2
    In a bowl add the drained tuna, the mayo,old bay, Tabasco, salt pepper, Worcestershire sauce, parsley, egg, crushed crackers and the cooled veggie mixture. Mix together.
  • Step 3
    Turn the oven on warm and wrap the flour tortillas in aluminum foil. Heat up the oil in your deep fryer or in a pan. Form the mixture into small balls and plop them in the deep fryer. When they are golden brown remove and repeat this step in batches until they are all cooked.
  • Step 4
    Let the balls cool on paper towels as you finish the balls. Place the tortillas wrapped in foil into the oven to warm through. Get the stations ready to build the tacos.
  • Step 5
    For the sauce combine lemon, mayo, old bay, sriracha, salt and pepper. This is the sauce slather onto the warm tortilla. Here it's up to you. I like cabbage, radish cheese tomato but you can make it however you like from here! enjoy.
