tuna melt patties
I love tuna melts and wanted to change it up a bit. I love salmon patties. So, why not tuna melt patties? I was pretty impressed with how tasty these are. I hope you enjoy them!

Ingredients
- 2 cans tuna in water (5 oz each)
- 1 large egg, beaten
- 1/4 cup light mayo (I prefer dukes light)
- 1 teaspoon mustard
- 1/2 cup Panko bread crumbs
- 1 teaspoon Old Bay seasoning
- salt and pepper, to taste
- 1/4 cup shredded cheese; a melty combination like mozzarella/provolone mix
- 1 tablespoon fresh chopped parsley
- 1 - fresh lemon, sliced
- 2 tablespoons extra virgin olive oil
How To Make tuna melt patties

Step 1Beat together egg, mayo, and mustard in a medium mixing bowl.

Step 2Add in 2 cans of drained tuna in water and mix.

Step 3Add in Panko crumbs, seasoning, and cheese.

Step 4In a cast iron skillet or frying pan, add 2 Tbsp of olive oil (you may add more depending on the size of your frying pan). Heat on medium high heat.

Step 5Shape the tuna mixture into 4 patties and place in the frying pan.

Step 6Brown on one side for approximately 5 minutes; then flip and repeat.

Step 7Remove from the frying pan and place on a plate with paper towels to soak up extra oil.

Step 8Garnish with fresh chopped parsley. Use the lemon to squeeze some fresh lemon juice on the patties and enjoy!
