I love tuna melts and wanted to change it up a bit. I love salmon patties. So, why not tuna melt patties? I was pretty impressed with how tasty these are. I hope you enjoy them!

Ingredients For tuna melt patties

2 cantuna in water (5 oz each)

1 lgegg, beaten

1/4 clight mayo (I prefer dukes light)

1 tspmustard

1/2 cPanko bread crumbs

1 tspOld Bay seasoning

salt and pepper, to taste

1/4 cshredded cheese; a melty combination like mozzarella/provolone mix

1 Tbspfresh chopped parsley
-
1fresh lemon, sliced
-
2 Tbspextra virgin olive oil
How To Make tuna melt patties

1Beat together egg, mayo, and mustard in a medium mixing bowl.

2Add in 2 cans of drained tuna in water and mix.

3Add in Panko crumbs, seasoning, and cheese.

4In a cast iron skillet or frying pan, add 2 Tbsp of olive oil (you may add more depending on the size of your frying pan). Heat on medium high heat.

5Shape the tuna mixture into 4 patties and place in the frying pan.

6Brown on one side for approximately 5 minutes; then flip and repeat.

7Remove from the frying pan and place on a plate with paper towels to soak up extra oil.

8Garnish with fresh chopped parsley. Use the lemon to squeeze some fresh lemon juice on the patties and enjoy!
