Ingredients
- ROASTED TOMATOES
- 1 pint grape tomatoes, halved
- olive oil
- salt and pepper
- HERBED BUTTER TUNA
- 6 tablespoons butter
- 1 teaspoon lemon juice
- 1/2 teaspoon fresh tarragon, minced
- 1/2 teaspoon fresh thyme, minced
- 1 tablespoon fresh parsley, minced
- 1/2 cup dry white wine
- 4 ahi tuna steaks
- salt and pepper
- fresh basil and micro greens, for garnish
How To Make tuna in herbed butter with roasted tomatoes

Step 1Preheat oven 425 degrees F. To make the roasted tomatoes, place the tomatoes on a baking sheet. Drizzle with olive oil and season with salt and pepper. Place in oven.

Step 2Meanwhile, make the herbed butter tuna. Place the butter in a saucepan on stove and let it melt. Add the lemon juice, tarragon, thyme, and parsley. Cook 1 minute. Add the wine and let simmer for 5 minutes.

Step 3Place the tuna steaks on a baking sheet and season with salt and pepper. Pour the butter over the tuna and after the tomatoes have been in the oven add the tuna to the oven and roast for about 5 minutes for med rare tuna.

Step 4Serve the tuna on a bed of tomatoes surrounded by fresh basil and topped with micro greens.
