Caretakers recipe. If I was through with all daily chores ( not to easy when your husband is in a wheelchair),I recommend this to try as a quick dinner or lunch. Takes only as long as the rice takes to cook, And he liked it.

Ingredients
- 1 cup long grain, dry, white rice or brown
- 1 can tuna, ( albacore)
- 1/4 pound butter, cold
- 2 - hard boiled eggs chopped
- 2 - green onions chopped
- 2 stalks celery chopped
- 2 cups water
- 1 teaspoon curry powder
How To Make tuna dinner in 20 minutes

Step 1In a tight fitting lidded pot bring water to a boil and add long grain rice ( can be brown long grain). Turn down to simmer.

Step 2Boil eggs until hard boiled.

Step 3Chop all veggies and eggs

Step 4When rice is fully done 20 minutes. Add butter and and curry powder. Then add all veggies, tuna and boiled eggs. Turn until full incorporated. Serve on a lettuce cup. Just enough room left in your stomach for desert.
