Caretakers recipe. If I was through with all daily chores ( not to easy when your husband is in a wheelchair),I recommend this to try as a quick dinner or lunch. Takes only as long as the rice takes to cook, And he liked it.

Ingredients For tuna dinner in 20 minutes

  • 1 c
    long grain, dry, white rice or brown
  • 1 can
    tuna, ( albacore)
  • 1/4 lb
    butter, cold
  • 2
    hard boiled eggs chopped
  • 2
    green onions chopped
  • 2 stalk
    celery chopped
  • 2 c
  • 1 tsp
    curry powder

How To Make tuna dinner in 20 minutes

    In a tight fitting lidded pot bring water to a boil and add long grain rice ( can be brown long grain). Turn down to simmer.

    Boil eggs until hard boiled.

    Chop all veggies and eggs
  • 4
    When rice is fully done 20 minutes. Add butter and and curry powder. Then add all veggies, tuna and boiled eggs. Turn until full incorporated. Serve on a lettuce cup. Just enough room left in your stomach for desert.
