tuna cakes

We quite often like to have fish and sometimes there is no fish in my freezer I will make the tuna cakes as I always have several tins of tuna and salmon..I have also made these cakes with salmon but prefer the tuna..serve with a piece of lemon and or tartar sauce..enjoy

Ingredients
- 2 - 170g tuna in water..drained
- 4 - green onions fine chop
- 1/2 cup each red and green pepper fine chop
- 2 stalks celery fine chop
- 1 - apple peeled and fine chopped
- 1 cup mashed potatoes
- 3/4 cup mayonnaise
- 1 EGG
- 1 1/2 cups seasoned bread crumbs
- 3 tablespoons oil and 1 tbs butter
How To Make tuna cakes

Step 1Drain water from tuna and put into bowl chop all vegetables and apple into 1/4 inch pieces..I use dry mashed potato and add enough boiled to potatoes to have the consistancy of regular mashed potatoes I will sometimes cook and mash a potato but the other works just as well.

Step 2Add all the vegetables, apple, mayo, egg to the bowl of tuna..I use my hands to mix this all together and make the tuna cakes,,I use about 2 to 2 and a half tablespoon to make a patty.

Step 3Pour the bread crumbs on a plate and dip both sides of the tuna cake into the crumbs..place them on a platter and cool them in the fridge for 2 to 4 hours.

Step 4When ready to fry add oil and 1 tablespoon of butter into fry pan and cook on each side for 8 minutes or golden brown...serve with a piece of lemon and or tartar sauce..a salad goes great with.this and they freeze well..I usually make a double batch as you have one mess and 3 or 4 dinners.
