2170g tuna in water..drained
4green onions fine chop
1/2 ceach red and green pepper fine chop
2 stalk(s)celery fine chop
1apple peeled and fine chopped
1 cmashed potatoes
1 1/2 cseasoned bread crumbs
3 Tbspoil and 1 tbs butter
How to Make Tuna cakes
- Drain water from tuna and put into bowl chop all vegetables and apple into 1/4 inch pieces..I use dry mashed potato and add enough boiled to potatoes to have the consistancy of regular mashed potatoes I will sometimes cook and mash a potato but the other works just as well.
- Add all the vegetables, apple, mayo, egg to the bowl of tuna..I use my hands to mix this all together and make the tuna cakes,,I use about 2 to 2 and a half tablespoon to make a patty.
- Pour the bread crumbs on a plate and dip both sides of the tuna cake into the crumbs..place them on a platter and cool them in the fridge for 2 to 4 hours.
- When ready to fry add oil and 1 tablespoon of butter into fry pan and cook on each side for 8 minutes or golden brown...serve with a piece of lemon and or tartar sauce..a salad goes great with.this and they freeze well..I usually make a double batch as you have one mess and 3 or 4 dinners.
