I do not like tuna casseroles as a rule, but this is one that my Mom in law makes and it is really GREAT!

Ingredients
- 1 - 6oz cans tuna in oil, drained, oil reserved
- 1 pkg. - 12 oz. corn muffin mix
- 1 tablespoon reserved tuna oil
- 2 tablespoons onion, chopped
- 2 - eggs, beaten
- 1 can cream of mushroom soup, undiluted
- 1/2 cup soft breadcrumbs
- 6 - thin slices of fresh lemon or orange
How To Make topsy turvy tuna pie

Step 1Drain tuna; save oil. Flake tuna.

Step 2Cook onion in oil until tender.

Step 3Add soup, eggs, breadcrumbs, and tuna; mix well.

Step 4Arrange lemon or orange slices on the bottom of a well greased 10 inch pie pan.

Step 5Pour tuna mixture over fruit slices.

Step 6Prepare corn muffin mix as directed on package. Spread batter over tuna mixture.

Step 7Bake casserole at 400 degrees for 25 to 30 minutes or until browned.

Step 8Remove from oven and let sit 5 minutes. Loosen from sides of pan with spatula and invert on serving plate.
