Ingredients
- 6 - tilapia fillets (6 oz. each)
- 3 tablespoons butter, melted
- 1/2 teaspoon salt, divided
- 1/2 teaspoon lemon pepper
- 1 medium tomato, seeded & chopped
- 1 medium orange, peeled, sectioned & chopped
- 1/3 cup red onion, finely chopped
- 1 tablespoon capers (optional - i don't use them)
- 1 1/2 tablespoons brown sugar, firmly packed
- 1 tablespoon red wine vinegar
How To Make tilapia with tomato-orange relish

Step 1Preheat oven to 425 degrees F.

Step 2Place fish in a greased 15" x 10" x 1" baking pan. drizzle with butter; sprinkle with 1/4 tsp salt & the lemon pepper. Bake for 10 minutes or until fish flakes easily with a fork.

Step 3In a small bowl, combine tomato, orange, capers (if using), brown sugar, vinegar & remaining salt. Serve on top of fish.
