i love fish cooked in many different ways this way is great it's easy to make

Ingredients

  • 4 cups fresh baby spinach
  • 1 pound tilapia fillets fresh or frozen and thawed
  • 1 can cream of broccoli soup
  • 3/4 cup water
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh oregano leaves
  • 1 clove garlic finely chopped
  • 1/4 teaspoon pepper
  • 1/4 cup crumbled feta cheese
  • 1/4 cup low fat granola
  • 2 cups hot cooked brown rice without salt

How To Make tilapia florentine with granola feta crust

  • Step 1
    Place spinach into shallow 11x8 glass or ceramic baking dish. Cover spinach evenly with tilapia. Combine soup, water, lemon juice, oregano, garlic and pepper in a small saucepan at medium heat.
  • Step 2
    Heat just to a boil stirring occasionally. Pour evenly over tilapia. Combine cheese and granola well in a small bowl. Sprinkle mixture over tilapia.
  • Step 3
    Bake uncovered at 450 until fish is cooked through and flakes easily 10-15 minutes depending on thickness of fish. Serve with rice.
