teriyaki salmon, cheesy couscous & heirloom tomato

A friend gave me these delicious baby heirloom tomatoes from her garden and I was wondering what I was going to do with them and I had some salmon in the fridge and a box of couscous in the pantry so I came up with this delicious meal. My husband loved it and I took leftovers to work and my co-workers were drooling over my lunch.

Ingredients

  • SALMON
  • 2 pounds salmon skinless cut into portions
  • - salt and pepper
  • 2 tablespoons olive oil
  • TERIYAKI SAUCE
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 3/4 cup brown sugar
  • 1 teaspoon ginger minced
  • 2 cloves garlic minced
  • COUSCOUS
  • 1 cup couscous
  • 1 1/4 cups chicken broth
  • 1/4 cup saki
  • - salt and pepper to taste
  • 1 tablespoon butter
  • 1/4 cup parmigiano-reggiano, grated
  • HEIRLOOM TOMATOES
  • 20 - baby heirloom tomatoes or 3 large heirloom tomatoes chopped
  • 1 medium shallot minced
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • GARNISH
  • 1/4 cup chopped scallions green parts only

How To Make teriyaki salmon, cheesy couscous & heirloom tomato

  • Step 1
    Mix the ingredients for sauce together in a saucepan and bring to a boil. Reduce to a simmer and simmer 5 to 10 minutes until reduced and thickened. Remove from heat and set aside. Season the salmon with salt and pepper and set aside.
  • Step 2
    For the couscous add the stock to a pan then add the saki and bring to a boil. Reduce the heat and stir in couscous and let cook until all liquid is absorbed. Remove from heat and stir in the butter and cheese.
  • Step 3
    For the tomatoes. Add oil to pan and saute the shallots, garlic until softened. Add the tomatoes and saute about 3 minutes. Remove from heat.
  • Step 4
    For the salmon add oil to hot pan. Sear the salmon on both sides. Reduce the heat and pour the teriyaki sauce over the salmon. Watch carefully so the sauce doesn't boil over. Keep basting and turning the salmon until salmon is cooked to desired doneness.
  • Step 5
    To assemble place couscous on plate. Top with salmon. Place the vegetables around the couscous and drizzle the Teriyaki sauce over plate. Garnish with chopped scallions.
