Ingredients
- 2 pounds fish your choice i used lake trout
- 1 tablespoon cornstarch
- 2 teaspoons salt
- 1 tablespoon shaoxing wine
- 6 cloves garlic
- 2 - green onions chopped white and green parts separated
- 8 ounces shiitake mushrooms stemmed and sliced
- - 1 inch piece of ginger grated
- 3 - star anise
- 1 large cinnamon stick broke in pieces
- 1 teaspoon ground szechuan pepper
- 1 tablespoon red pepper flakes
- 2 tablespoons oil
- 2 tablespoons broad bean paste
- 1 tablespoon chinese fermented beans
How To Make szechuan fish

Step 1Mix the cornstarch, salt and wine and add the fish and marinate for 15 to 30 minutes.

Step 2Add the oil to a large skillet. Toast the cinnamon stick and star anise for about 2 minutes. Remove with slotted spoon and discard. Add the ginger, garlic, white parts of the green onion, mushrooms, and half of the szechuan pepper and red pepper flakes. Cook 1 minute

Step 3Add the broad bean paste and fermented black beans and stir fry 1 minute. Add 2 1/2 cups of water and bring to a boil reduce the heat and simmer 10 minutes.

Step 4Add the fish and simmer 5 more minutes. In a separate pan add 2 tsp oil and the other half of szechuan pepper and red pepper flakes cook for 1 minute. Pour the szechuan oil over the fish in the other pan Stir in the green parts of the green onion and serve
