Ingredients
- 4 skinless salmon filets
- salt and pepper
- 2 tablespoons olive oil
- SAUCE
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 1 cup chicken or seafood stock
- 1 cup heavy cream
- 3/4 cup shredded Parmesan cheese
- 1/2 cup sun-dried tomatoes, drained
- salt and pepper
- fresh basil, chiffonade for garnish
How To Make sun-dried tomato cream salmon

Step 1Season the salmon with salt and pepper. Add oil to a large saucepan and cook the salmon 5 minutes on each side. Remove the salmon to a plate.

Step 2Add the butter to the same skillet. Whisk in the flour. Cook 2 minutes.

Step 3Add the stock and heavy cream. Cook until thickened.

Step 4Then add the sun-dried tomatoes and cheese. Cook until the cheese is melted.

Step 5Add the salmon back into the pan and cook 3 to 4 more minutes. Taste and season with salt and pepper.

Step 6Serve garnished with basil.
