Ingredients For sun-dried tomato cream salmon

  • 4
    skinless salmon filets
  • salt and pepper
  • 2 Tbsp
    olive oil
  • SAUCE
  • 4 Tbsp
    butter
  • 4 Tbsp
    all-purpose flour
  • 1 c
    chicken or seafood stock
  • 1 c
    heavy cream
  • 3/4 c
    shredded Parmesan cheese
  • 1/2 c
    sun-dried tomatoes, drained
  • salt and pepper
  • fresh basil, chiffonade for garnish

How To Make sun-dried tomato cream salmon

  • 1
    Season the salmon with salt and pepper. Add oil to a large saucepan and cook the salmon 5 minutes on each side. Remove the salmon to a plate.

    Add the butter to the same skillet. Whisk in the flour. Cook 2 minutes.

    Add the stock and heavy cream. Cook until thickened.

    Then add the sun-dried tomatoes and cheese. Cook until the cheese is melted.

    Add the salmon back into the pan and cook 3 to 4 more minutes. Taste and season with salt and pepper.

    Serve garnished with basil.
