How to Make Summer Seafood Salad
- Separate imitation crab meat and cut into chunks. Place in large mixing bowl.
- Slice celery diagonally, about 1/8 inch thick. Finely chop red onion and add to bowl
- Add mayonnaise, salt & pepper and mix well. Cover and chill thoroughly. Serve with lettuce and tomato, or in a pita pocket.
- You may also add 1 cup of cooked, cooled penne pasta to extend the dish. Mayonnaise may have to be increased by about 2 tbs if the pasta is added.
