Ingredients
- 1/4 cup onion, chopped
- 3 1/4 tablespoons butter
- 3 ounces can broiled chopped mushrooms, drained but reserve liquid
- 7 ounces canned crabmeat, flaked
- 7 ounces shrimp
- 7 ounces clams
- 1/2 cup ritz cracker crumbs
- 3 1/4 teaspoons salt
- 1-2 tablespoon parsley
- - milk
- 1 cup shredded swiss cheese
- 1/2 teaspoon paprika
- 3 tablespoons flour
- 8 - flounder fillets
- 1/2 cup white wine
- SAUCE
- 3 tablespoons butter
- 1/2 teaspoon salt
- 3 tablespoons flour
- 1/2 cup white wine
- - milk
How To Make stuffed flounder

Step 1In a skillet, saute 1/4 tbsp butter and onion, until tender but not brown. Stir in drained mushrooms, crabmeat, clams, shrimp, crackers, parsely, 1/2 tsp salt, dash pepper.

Step 2Spread onto fillets. Roll and place seam side down in a butter baking dish. Preheat oven to 400 degrees.

Step 3Sauce: in a saucepan melt 3 tbsp butter, whisk in 3 tbsp flour, 1/4 tsp salt and add milk to the reserved mushroom liquid to make 1 1/2 cups and add 1/2 cup wine. Cook until thick and bubbles. Add salt and pepper to taste.

Step 4Pour over fillets and bake for 25 minutes. Sprinkle wiht cheese and paprika and bake 10 minutes longer or until fish is flaky.
