Ingredients

  • STEAMED FISH
  • 3 green onions, white parts only sliced
  • 2 bass fish fillets
  • salt
  • 1 inch ginger, cut into thin rounds
  • 1 tablespoon soy sauce
  • 1 teaspoon granulated sugar
  • GINGER SCALLION SAUCE
  • 1 bunch green onions, sliced
  • 4 inch piece ginger, peeled and chopped
  • 1 cup grapeseed oil
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar

How To Make steamed fresh bass with ginger and scallions sauce

  • Step 1
    In a steamer, add the scallion whites on a plate. Place the fish on top. Season with some salt and top with the ginger.
  • Step 2
    Steam 7 to 10 minutes. Remove fish from the plate and drain off liquid.
  • Step 3
    Mix the soy sauce and sugar and pour over the fish.
  • Step 4
    For the sauce, place the scallion and ginger in a food processor. Pulse until small pieces.
  • Step 5
    Place in a saucepan and add the oil. Once warm and bright green, pour over the fish.
