Special Shrimp Tacos
1 cfresh medium or hot salsa (from the deli section at your grocery)
1 cfresh or frozen peaches, drained and diced
1 lbcooked medium shrimp, peeled and de-veined
1 Tbspfresh cilantro, finely chopped
1 cchopped lettuce (use a variety of types of lettuce if possible)
6warm corn tortillas
How to Make Special Shrimp Tacos
- Combine salsa and peaches in a large skillet. Cook over medium heat until heated through. Add shrimp and cilantro. Continue cooking until shrimp is hot.
- Divide lettuce into 6 equal portions. Place 1 portion in the center of each tortilla. Next put a scant 1/2 cup of shrimp mixture on top of lettuce. Fold tortillas and serve immediately.
