I fix this at least twice a month, when I can find it. I know Krogers didn't have it for over a month. It is my favorite to fix for my man.

Ingredients
- 12 ounces ocean perch
- 2/3 cup aunt jemima corn meal mix
- 2/3 cup all purpose flour
- 1 - egg
- 1/2 cup milk
- 2 teaspoons each lawry's seasoning salt and black pepper
- - vegetable oil for frying
How To Make southern fried perch

Step 1In colander, place fish and season with the spices, let rest 30 minutes

Step 2in a bowl to dredge, mix egg and milk

Step 3in another bowl to dredge, mix flour, and corn meal mix

Step 4heat oil in fryer skillet or dutch oven, at least 3/4 " deep

Step 5dip fish pieces in egg mixture, then in the flour mixture, shake off excess, lay each pirce carefully in hot oil ( burner on med heat )

Step 6continue until all fish is in skillet. cook 10 minutes, turn each piece and fry another 10 minutes.

Step 7when fish is dark as you want, remove from oil to paper towel lined plate.
