I created this recipe for my former classmate and friend Alicia McGraw. My personal challenge to my Facebook family and friends was for me to create an original recipe based on ingredients they requested me to use. You Ask, I Deliver! Alicia wanted me to create a recipe consisting of red snapper, shrimp, chipotle peppers and scallions. Here is my original recipe. I hope you like it.

Ingredients For snapper ala-licia

  • RED SNAPPER
  • 1 lb
    red snapper filet, (4) 4oz portions
  • 1 Tbsp
    slap ya mama cajun seasoning
  • 1 Tbsp
    olive oil, extra virgin
  • CHIPOTLE CREAM SAUCE
  • 2 md
    leeks, sliced into rounds
  • 3 md
    scallions, sliced into rounds
  • 2 md
    garlic cloves, micced
  • 1 tsp
    thyme, dried
  • 3 Tbsp
    butter, unsalted
  • 1/2 c
    heavy whipping cream
  • 1/2 c
    wine, dry white
  • 2 oz
    andouille sausage, chopped
  • 1 md
    chiptole pepper in adobo sauce, chopped
  • salt and pepper to taste
  • grilled shrimp and lobster

How To Make snapper ala-licia

    Season snapper with cajun seasoning and evoo.

    In a large heated skillet, add 1 tbsp of butter and sausage. Sautee for 2 minutes. Add remaining butter, leeks, scallions and garlic. Simmer on low unitl leeks are soft. Add chipotle pepper, thyme, wine and heavy cream. Simmer for 2-3 additional minutes. Salt and pepper to taste.

    In a heated skillet, pan sear snapper skin side down for 2-3 minutes. Ensure that the skin is crispy. Flip over and fry fish until done.

    On 4 serving plates, put some of the chipotle cream sauce, snapper, grilled seafood and some addtional sauce on top. Serve with herb israeli couscous or starch of your choice.
