I created this recipe for my former classmate and friend Alicia McGraw. My personal challenge to my Facebook family and friends was for me to create an original recipe based on ingredients they requested me to use. You Ask, I Deliver! Alicia wanted me to create a recipe consisting of red snapper, shrimp, chipotle peppers and scallions. Here is my original recipe. I hope you like it.

Ingredients
- RED SNAPPER
- 1 pound red snapper filet, (4) 4oz portions
- 1 tablespoon slap ya mama cajun seasoning
- 1 tablespoon olive oil, extra virgin
- CHIPOTLE CREAM SAUCE
- 2 medium leeks, sliced into rounds
- 3 medium scallions, sliced into rounds
- 2 medium garlic cloves, micced
- 1 teaspoon thyme, dried
- 3 tablespoons butter, unsalted
- 1/2 cup heavy whipping cream
- 1/2 cup wine, dry white
- 2 ounces andouille sausage, chopped
- 1 medium chiptole pepper in adobo sauce, chopped
- - salt and pepper to taste
- - grilled shrimp and lobster
How To Make snapper ala-licia

Step 1Season snapper with cajun seasoning and evoo.

Step 2In a large heated skillet, add 1 tbsp of butter and sausage. Sautee for 2 minutes. Add remaining butter, leeks, scallions and garlic. Simmer on low unitl leeks are soft. Add chipotle pepper, thyme, wine and heavy cream. Simmer for 2-3 additional minutes. Salt and pepper to taste.

Step 3In a heated skillet, pan sear snapper skin side down for 2-3 minutes. Ensure that the skin is crispy. Flip over and fry fish until done.

Step 4On 4 serving plates, put some of the chipotle cream sauce, snapper, grilled seafood and some addtional sauce on top. Serve with herb israeli couscous or starch of your choice.
