skillet potatoes with pesto and shrimp
This is a very easy and tasty recipe! One pan, a few ingredients, 30 minutes, and you're done! Its very hearty also. The flavors go together nicely. I think of it as an Italian version of fish and chips!

Ingredients
- 2 - large potatoes - washed, peeled and thinly chopped
- 3 or 4 tablespoons olive oil, extra virgin
- - salt and pepper to taste
- 1/3 cup pesto
- 1/2 pound large shrimp - 31 - 40 count size - cleaned and peeled
How To Make skillet potatoes with pesto and shrimp

Step 1Heat oil in a large skillet on med/high heat

Step 2Sprinkle potatoes with salt and pepper.

Step 3Add potatoes to skillet and cook til tender, stirring frequently.

Step 4Add shrimp and cook til shrimp is opaque. Then add pesto and toss to coat.

Step 5Cook for about 1 minute to heat pesto.

Step 6Taste and add more salt and pepper if needed.

Step 7Serve warm.
