Here at my home the fried rice king is my brother. We have so many different ways of making up a skillet full of fried rice!!! The possibilities are endless!

Ingredients

  • 1/2 tsp
    sesame oil
  • 1 Tbsp
    butter
  • 3 clove
    garlic, finely chopped
  • 1
    red chili, chopped
  • 1
    red pepper, diced
  • 2
    eggs, slightly beaten
  • 3 Tbsp
    patis (fish sauce) or soy sauce
  • 2 Tbsp
    oyster sauce
  • 1 tsp
    brown sugar, packed
  • 4 c
    cooked rice
  • 1 c
    pineapples, diced
  • 1 c
    raw shrimp, cleaned, deveined and peeled
  • 1/2 c
    peas, fresh or frozen
  • 2
    stalks green onion
  • 1/4 c
    cilantro or flat leaf parsley, finely chopped

How to Make SHRIMP PINEAPPLE FRIED RICE

Step-by-Step

  1. Heat the oil and the butter in a large skillet.
  2. Add the garlic, red chili, red pepper, stir-fry till fragrant.
  3. Add the patis or soy sauce, oyster sauce and brown sugar, stir-fry till incorporated.
  4. Add the cooked rice and break up any large clumps and mix till just incorporated.
  5. Make a well in the middle and pour in the slightly beaten eggs and incorporate it.
  6. Add the pineapple chunks, shrimp and peas and stir-fry for a minute.
  7. Remove from heat and place on a serving platter and garnish with green onions and cilantro or parsley.
