shrimp pineapple fried rice

Here at my home the fried rice king is my brother. We have so many different ways of making up a skillet full of fried rice!!! The possibilities are endless!

Ingredients

  • 1/2 teaspoon sesame oil
  • 1 tablespoon butter
  • 3 cloves garlic, finely chopped
  • 1 - red chili, chopped
  • 1 - red pepper, diced
  • 2 - eggs, slightly beaten
  • 3 tablespoons patis (fish sauce) or soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon brown sugar, packed
  • 4 cups cooked rice
  • 1 cup pineapples, diced
  • 1 cup raw shrimp, cleaned, deveined and peeled
  • 1/2 cup peas, fresh or frozen
  • 2 - stalks green onion
  • 1/4 cup cilantro or flat leaf parsley, finely chopped

How To Make shrimp pineapple fried rice

  • Step 1
    Heat the oil and the butter in a large skillet.
  • Step 2
    Add the garlic, red chili, red pepper, stir-fry till fragrant.
  • Step 3
    Add the patis or soy sauce, oyster sauce and brown sugar, stir-fry till incorporated.
  • Step 4
    Add the cooked rice and break up any large clumps and mix till just incorporated.
  • Step 5
    Make a well in the middle and pour in the slightly beaten eggs and incorporate it.
  • Step 6
    Add the pineapple chunks, shrimp and peas and stir-fry for a minute.
  • Step 7
    Remove from heat and place on a serving platter and garnish with green onions and cilantro or parsley.
