shrimp pineapple fried rice
Here at my home the fried rice king is my brother. We have so many different ways of making up a skillet full of fried rice!!! The possibilities are endless!

Serves 4
Ingredients
- 1/2 teaspoon sesame oil
- 1 tablespoon butter
- 3 cloves garlic, finely chopped
- 1 - red chili, chopped
- 1 - red pepper, diced
- 2 - eggs, slightly beaten
- 3 tablespoons patis (fish sauce) or soy sauce
- 2 tablespoons oyster sauce
- 1 teaspoon brown sugar, packed
- 4 cups cooked rice
- 1 cup pineapples, diced
- 1 cup raw shrimp, cleaned, deveined and peeled
- 1/2 cup peas, fresh or frozen
- 2 - stalks green onion
- 1/4 cup cilantro or flat leaf parsley, finely chopped
How To Make shrimp pineapple fried rice

Step 1Heat the oil and the butter in a large skillet.

Step 2Add the garlic, red chili, red pepper, stir-fry till fragrant.

Step 3Add the patis or soy sauce, oyster sauce and brown sugar, stir-fry till incorporated.

Step 4Add the cooked rice and break up any large clumps and mix till just incorporated.

Step 5Make a well in the middle and pour in the slightly beaten eggs and incorporate it.

Step 6Add the pineapple chunks, shrimp and peas and stir-fry for a minute.

Step 7Remove from heat and place on a serving platter and garnish with green onions and cilantro or parsley.
