I used to make this for a late New Year's Eve supper every year...back in the days when I actually used a Chafing Dish. Now it goes directly from stove to table, but is still good.

Ingredients
- 1/3 cup butter
- 2 tablespoons enriched flour
- 2 cups light cream
- 4 - slightly beaten egg yolks
- 1/2 teaspoon salt
- 1/4 cup sherry
- 2 teaspoons lemon juice, fresh
- 2 cups cleaned shrimp
How To Make shrimp newburg

Step 1Melt butter in chafing dish or pan; blend in flour; gradually stir in cream. Cook slowly, stirring constantly till sauce thickens.

Step 2Stir small amount sauce in to egg yolks; return to pan and cook till blended, stirring constantly, about 1 minute.

Step 3Add cleaned raw shrimp and salt; heat thoroughlyj. Add Sherry and lemon juice. Serve over hot toast points. Sprinkl with paprika. Makes 5 or 6 servings.
