I used to make this for a late New Year's Eve supper every year...back in the days when I actually used a Chafing Dish. Now it goes directly from stove to table, but is still good.

  • 1/3 c
  • 2 Tbsp
    enriched flour
  • 2 c
    light cream
  • 4
    slightly beaten egg yolks
  • 1/2 tsp
  • 1/4 c
  • 2 tsp
    lemon juice, fresh
  • 2 c
    cleaned shrimp

How to Make Shrimp Newburg


  1. Melt butter in chafing dish or pan; blend in flour; gradually stir in cream. Cook slowly, stirring constantly till sauce thickens.
  2. Stir small amount sauce in to egg yolks; return to pan and cook till blended, stirring constantly, about 1 minute.
  3. Add cleaned raw shrimp and salt; heat thoroughlyj. Add Sherry and lemon juice. Serve over hot toast points. Sprinkl with paprika. Makes 5 or 6 servings.
