Ingredients

  • 3/4 cup quick cooking grits
  • 3 cups water
  • 1/4 cup roasted red peppers, diced
  • 1 teaspoon curry powder
  • dash sea salt
  • 1 tablespoon olive oil, extra virgin
  • 2 tablespoons onion, chopped
  • 1/2 cup mushrooms, sliced
  • 1/2 pound shrimp, peeled & deveined, cut into bite-sized pieces)
  • 1/4 cup white wine
  • 1 1/2 teaspoons dijon mustard
  • 2 tablespoons sour cream, fat-free
  • 1 teaspoon soy sauce, low sodium
  • - hot sauce, to taste
  • - parsley, chopped (for garnish)
  • - bacon or turkey bacon, crumbled (optional)

How To Make shrimp & grits

  • Step 1
    Prepare grits according to package directions. Add curry & bell peppers; stir well over low heat for 1 minute to allow flavors ot marry. Cover & keep warm.
  • Step 2
    In a large saute pan, heat olive oil. Add onion & cook for 2 minutes over medium-high heat stirring occasionally. Add mushrooms, stir to combine & cook for 3 minutes. Add shrimp, stir to combine & cook for 2 minutes. In a bowl, mix the white wine, mustard, sour cream, soy sauce & hot sauce. Pour mixture into pan while stirring with shrimp & vegetables. Simmer uncovered for 2 minutes.
  • Step 3
    To serve, ladel an even amount of grits onto 4 dinner plates, creating a large, thin "circle" of grits on each. Spoon the shrimp mixture onto the center of grits. Garnish each plate with a sprinkling of chopped parsley & serve. Optional garnish: bacon or turkey bacon.
