Ingredients

  • 1 pound shrimp, peeled & deveined (tails on)
  • 1/3 cup all-purpose flour
  • 2 tablespoons olive oil, extra-virgin
  • 2 large onions, chopped
  • 1 medium green bell pepper, chopped
  • 4 stalks celery, sliced
  • 5 cloves garlic, minced
  • 32 ounces beef broth, reduced-sodium
  • 3 cups water
  • 16 ounces okra, sliced
  • 1 pound crabmeat, fresh, cooked
  • 3 cups white rice, cooked & hot
  • 1 cup scallions (both greens & whites), sliced
  • tabasco
  • CAJUN SPICE:
  • 1/2 teaspoon thyme, dried
  • 1/4 teaspoon white pepper
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

How To Make shrimp & crab gumbo

  • Step 1
    In a small bowl, add all cajun spice ingredients; mix to combine & set aside.
  • Step 2
    Rinse shrimp & pat dry with paper towels. In a medium skillet, cook flour over medium heat, about 6 minutes or until browned, stirring frequently. Place in small bowl & set aside to cool.
  • Step 3
    In a dutch oven, heat oil over medium heat. Add onion, bell pepper, celery & garlic; cook & stir 5 minutes or until tender.
  • Step 4
    Slowly whisk 16 oz or 1/2 of broth into browned flour. Add flour/broth mixture, remaining broth, water & cajun spice to dutch oven. Stir in okra. Bring to boiling; reduce heat. Cover & simmer 15 minutes.
  • Step 5
    Add shrimp; cook 3 minutes or until shrimp are opaque. Gently stir in crabmeat; cook until heated through.
  • Step 6
    To serve, serve over rice & garnish with scallions & tabasco sauce.
