Ingredients

  • 2 large tuna steaks
  • 1 tablespoon olive oil
  • salt and pepper
  • EGG YOLK SAUCE
  • 4 large egg yolks
  • 1/2 cup water
  • 4 tablespoons olive oil
  • 4 teaspoons corn starch
  • 1 1/2 cups water
  • 1 teaspoon salt
  • 2 teaspoons lemon juice

How To Make seared tuna steak with egg yolk sauce

  • Step 1
    For the egg yolk sauce, beat the egg yolks with 1/2 cup water. Heat the oil. Stir in the corn starch until smooth.
  • Step 2
    Add the remaining water and salt. Whisk until smooth. Turn heat to low and gradually pour in the beaten eggs and whisk until smooth and creamy.
  • Step 3
    Remove from heat and stir in the lemon juice. Set aside.
  • Step 4
    Season the tuna with salt and pepper. Add oil to a skillet and sear the tuna for about 4 minutes on each side. Let rest for 5 minutes.
  • Step 5
    Slice the tuna and serve with the egg yolk sauce.
