How to Make SEARED SCALLOPS WITH ORANGE BUTTER
- VERY IMPORTANT! ZEST YOUR ORANGES FIRST. RESERVE A TBLSP OF ZEST.
CUT AROUND ORANGE TO PEEL AND CUT SEGMENTS FROM THE ORANGE. SET ASIDE SEGMENTS
SQUEEZE JUICE INTO BOWL AND SET ASIDE-SHOULD BE AROUND 1/4 CUP OF JUICE. - PAT SCALLOPS VERY DRY AND SEASON WITH SALT & PEPPER.
SEAR SCALLOPS IN 2 TBSP BUTTER UNTIL CARAMELIZED ON EACH SIDE. (ABOUT A MINUTE) PATIENCE IS KEY-ONLY TURN THE SCALLOPS ONCE. - SET SEARED SCALLOPS ASIDE WHILE PREPARING SAUCE.
SAUTE SHALLOTS IN SMALL AMOUNT OF BUTTER UNTIL CLEAR.
ADD IN ORANGE JUICE, ZEST AND CHICKEN STOCK OR WINE.
REDUCE THIS TO HALF. - ***REMOVE SAUCE FROM HEAT***
WHISK COLD BUTTER 6 TBLSP INTO THE SAUCE A CUBE OR TWO AT A TIME.
THIS WILL EMULSIFY THE SAUCE.
ARRANGE SCALLOPS ON PLATTER-SPOON OVER SAUCE
ARRANGE ORANGE SEGMENTS ON TOP AS GARNISH.
A LITTLE PARSLY FOR COLOR IS ALWAYS NICE WITH THIS FOR PRESENTATION.
