Ingredients
- 2 6 inch cod fillets
- salt and pepper
- 1 cup rice flour
- 4 tablespoons vegetable oil
- MAYO
- 1 cup good quality mayonnaise
- 6 sun-dried tomatoes, chopped
- 3 tablespoons fresh basil, chopped
- 1 tablespoon lemon juice
- salt and pepper
How To Make sauteed cod with sun-dried tomato basil mayo

Step 1Mix all the ingredients for the mayonnaise and set aside for the flavors to meld.

Step 2Season the cod with salt and pepper. Dust in the rice flour.

Step 3Add the oil to a skillet. Once the oil is hot, add the cod and brown on one side for about 5 minutes. Turn and brown on the other side.

Step 4Serve with the sun-dried tomato basil mayo.
