Ingredients

  • 2 6 inch cod fillets
  • salt and pepper
  • 1 cup rice flour
  • 4 tablespoons vegetable oil
  • MAYO
  • 1 cup good quality mayonnaise
  • 6 sun-dried tomatoes, chopped
  • 3 tablespoons fresh basil, chopped
  • 1 tablespoon lemon juice
  • salt and pepper

How To Make sauteed cod with sun-dried tomato basil mayo

  • Step 1
    Mix all the ingredients for the mayonnaise and set aside for the flavors to meld.
  • Step 2
    Season the cod with salt and pepper. Dust in the rice flour.
  • Step 3
    Add the oil to a skillet. Once the oil is hot, add the cod and brown on one side for about 5 minutes. Turn and brown on the other side.
  • Step 4
    Serve with the sun-dried tomato basil mayo.
