Salmon steaks are sautéed in the marinade of the sweet potatoes, onions, tomatoes, and whole garlic cloves (friends!!); then the garlic cloves and the leftover marinade are added to the mayo for a great and tasty dip. Ingredients

  • 2 small salmon filet, (3 oz each)/1 large
  • 5 ounces sweet potato, (cut into fries)
  • 3 slices red onions
  • 8-10 grape tomatoes
  • 6 tablespoons olive oil
  • 1 teaspoon unsalted butter
  • 1 lemon, juiced, to taste
  • 1 clove garlic, in husk
  • 1 clove fresh garlic, sliced
  • dried rosemary, to taste
  • black pepper, to taste
  • 1/2 cup mayonnaise

    Step 1
    Cut the sweet potatoes; slice the onions and tomatoes; set up the ingredients
  • Salmon with mayo/veggies in pan
    Step 2
    Add all of the veggies to the pan along with the unpeeled garlic and 3 Tbsp of olive oil; Sauté.

    Once the potatoes begin to soften up, season them with the black pepper and rosemary. Move them to one side of the pan and drizzle the rest of the olive oil over them; let the now-flavored oil collect on the empty side of the pan.

    Place the salmon on the flavored oil and cook till medium rare; turning once and browning both sides.

    Remove the veggies and salmon to a plate and let finish cooking;
  • Garlic mayo

    Leave the large clove of garlic in the pan; Deglaze the pan with the butter and lemon juice; smash the garlic clove, then add all to the mayo. Stir till mixed.
