I introduced this recipe to my family almost 20 years ago and it has been a favorite ever since. When my brothers visit they can't wait to dig in.

Ingredients
- 1 1/4 cups grated cheddar cheese ( i use old )
- 2 1/4 cups flour ( i mix half whole wheat )
- 1/3 cup butter
- 2 cans (213g ea.) red salmon (the good stuff works best, but you can use pink)
- 2 large eggs
- 1 cup sour cream ( or plain yogurt )
- 2 - chopped green onions
How To Make salmon pie

Step 1Crust Grate the cheese. Melt butter. Combine these with the flour and set asside almost one full cup for topping. Pour into a large pie plate (to prevent spillage). Spread up the sides evenly and press lightly. Set asside.

Step 2Filling Drain and debone salmon. Break-up the salmon and spread evenly over the crust. Next mix together the eggs, sour cream, and onions. Pour over crust.

Step 3Topping Sprinkle reserved 'crust' mixture as evenly as you can, over the top of salmon mixture. Press slightly with the palm of your hand. Bake in 400 oven for 1 hour. Allow to rest about 5-10min. before cutting. I put sour cream on the table because my brothers like to put more on top of their pie.
