Found this recipe in a church cookbook many years ago and still make it to this day.

Ingredients

  • 1 can red salmon, canned (large size can)
  • 1 - egg, beaten
  • 1/3 cup minced onion (i use the dried onions)
  • 2 tablespoons parsley (i use the dried)
  • 1/2 cup flour
  • 1 & 1/2 teaspoons baking powder
  • - cracker crumbs
  • - salt & pepper to taste

How To Make salmon patties

  • Step 1
    Drain salmon, reserve 2 Tablespoons of liquid from the salmon.
  • Step 2
    Combine salmon, egg, onion, parsley, salt & pepper; stir in flour.
  • Step 3
    Combine baking powder and resrved salmon liquid and stir into salmon mixture.
  • Step 4
    Form into 6 patties, roll in cracker crumbs and fry in hot oil until golden brown on both sides.
