Growing up my mother made wonderful salmon patties and always served them with fried potatoes and creamed peas on the side. I remember her base recipe, though it wasn't written, and have used it to come up with my version. This recipe has been a work in process, for many years. Salmon patties, which can be boring and bland, can be spectacular if treated correctly. I think I finally came up with the right combination of ingredients, that are not only full of flavor but will fry up crispy and golden every time. I hope you enjoy this classic as much as I do.
Blue Ribbon Recipe
Anyone would be happy to eat these salmon patties... not just mom. Once fried, the golden brown outside is crunchy and crispy while the salmon inside remains tender. Rich and slightly sweet, there is tanginess from lemon and smokiness from the Old Bay seasoning. Enjoy the patties with a veggie side, turn them into sandwiches, or use them as the base for decadent eggs Benedict.
Ingredients
- 2 cans pink salmon, bones and skin removed; juice reserved (14.75 oz each)
- 1 bag Louisiana seasoned crispy fish fry mix (10 oz)
- 6 tablespoons mayonnaise
- 2 teaspoons Old Bay seasoning
- 2 large eggs
- 2 teaspoons onion powder
- salt and pepper, to taste
- 1 lemon, juiced
- lard or vegetable oil, for frying

Step 1Drain the salmon reserving the juice. Add salmon to a large bowl. Remove skin and bones. Lightly flake apart.

Step 2Add 8 oz of the fish fry mix to a bowl. Add the mayonnaise, Old Bay seasoning, eggs, onion powder, salt, pepper, and juice from 1 lemon.

Step 3Mix with the flaked salmon. If the mixture is too wet, add more fish fry mix. If the mixture seems too dry, add some of the reserved juice from the salmon.

Step 4Make the mixture into 1/4 cup patties.

Step 5In a large, cast iron preferred, skillet over medium-high heat, add lard or vegetable oil. Bring up to temperature and add patties to skillet.

Step 6Cook until the edges begin to brown and you have a nice golden brown color on the bottom side; about 4-5 minutes. Flip patties, carefully, and cook another 4-5 minutes or until crispy golden. Serve warm.
